Curry Cauliflower “Steaks” with Garlicky Greens

Hearty, spicy, and oh-so-cozy for a winter night in–utilize the entire Romanesco Cauliflower for a vegetarian stunner. It’s texture is crunchier and yields more nuttiness than it’s traditional cauliflower cousin. *Math junkies-count the number of spirals (tip–it’s a Fibonnaci number), and add one satisfied diner to the equation x 2 to impress.

Curry Cauliflower “Steaks” with Garlicky Greens

Serves 1-2 as a main

Ingredients:

1 Head Cauliflower, leaves intact

4 Garlic bulbs, minced

1 tsp Garlic Powder

2 tsp Curry Powder

2 Tbsp Olive Oil

Pinch Sea Salt

Instructions:

  1. Preheat the oven to 400F and start prepping. Remove the leaves from the cauliflower and de-stem. Roughly chop the leaves, rinse and set aside. Cut the cauliflower from top to base into 2-3, 3/4inch steaks. Reserve fallen and side florets to roast, freeze, or add to a salad.

  2. Heat a skillet on medium high with 1 Tbsp olive oil. Quickly sear the steaks until golden brown, a few minutes on each side. Place the steaks onto a parchment lined baking sheet.

  3. In a small bowl, combine 1 Tbsp Olive Oil with your favorite go-to curry powder to form a paste. Rub or brush the paste on the steaks (get messy, I used my fingers!). Add greens to the pan with fresh garlic, garlic powder, salt, and a splash of olive oil. Mix to combine.

  4. Roast in the oven until cauliflower steaks are tender, 15-20 minutes. Check half-way through on the greens (depending on your oven, they may cook faster than the steaks. Simply remove onto a dish and let steaks cook longer if they start to charr*). Plate the greens and steaks over your favorite grain (I put a batch of brown rice on the stove at the start of prep!), serve, and enjoy.

*warning, cauliflower leaf chips may put kale chips to shame. #sorrynotsorry
