Thanksgiving Recipe: Nextdoorganics’ Kale Panzanella
Mix up your side salad this year, and put together this kale salad. The homemade toasted croutons - use SCRATCHbread’s from our webstore - and hearty kale allow you to make this salad early in the day. The flavors just amplify the longer this “bread salad” sits.
Ingredients
For the salad:
2 bunches of kale, ribs removed and thinly slices
2 thick slices of SCRATCHbread bread, preferably stale, cut into crouton-sized cubes
2 shallots, thinly sliced
1 cup diced tomatoes
6 ounces pancetta, cubed
olive oil
fresh herbs (optional)
For the salad dressing:
1/2 cup olive oil
note: you can add the pancetta drippings to this as well, making a 1/2 cup blend of both fats
3 tablespoons apple cider vinegar
1 tablespoon brown sugar
1 tablespoon dijon mustard
Salt and pepper
minced garlic or lemon (optional)
Instructions
Preheat the oven to 300 degrees. Toss the cubed bread lightly with olive oil, spread on a baking pan and bake for 15-20 minutes. Your croutons should be crunchy and slightly browned.
Add the pancetta to a cold pan and bring to medium-high heat. Cook, stirring occasionally, until the pancetta is browned. Remove browned pancetta and reserve. If you’re adding pancetta drippings to the dressing, let cool slightly and pour into a small bowl for your dressing.
Whisk together salad dressing ingredients and massage (yes, with your hands) into the kale. Feel free to play with the dressings proportions. If you like vinegar-heavy dressings, add more apple cider vinegar. Or, add garlic or lemon for more of a flavor punch.
Add pancetta, shallots, croutons, cherry tomatoes and fresh herbs, toss and let sit for a minimum of 30 minutes and up to four hours.
