Avocado Carrot Salad

This salad is inspired by one of my favorite go-to work lunch spots in Soho, The Smile. Minimal, natural ingredients, maximum flavor.

Avocado Carrot Salad

Serves 2 as a side

Ingredients:

4 large Carrots, thinly sliced*

1 ripe Avocado, diced

1 juice Lemon

Pinch Sea Salt

1 Tbsp Black Sesame Seeds to top

Lemon Zest to garnish

*To save time, cut carrots using a mandolin slicer.

Instructions:

  1. Add all ingredients to a large mixing bowl and combine with hands. Massage the avocado and lemon juice into the carrots like those carrots have deep seeded issues. The acid from the lemon juice and salt will soften the carrots, and your five-star masseuse touch will turn the avocado into a tasty, tangy, omega-3-packed dressing.

  2. Zest lemon over salad, add sesame seeds, crunch, and enjoy!

Taken 1.5 seconds after snapping the last photo. If you carrot all, this is a salad for the books.
